Lemon Sugar Cookie Recipe

Ingredients

  • 2 C butter, softened
  • 2 C sugar
  • 2 eggs
  • 1/2 t lemon oil
  • zest & juice of 1 lemon
  • 1 heaping T lemon curd
  • 2 lbs flour (6 C)
  • 1 t salt
  • 1 T baking powder

Instructions

  1. In a mixer, cream butter and sugar together. Add eggs, lemon oil, zest, juice, and curd. Mix well. 

  2. Mix flour, salt, and baking powder in a separate bowl.

  3. Gradually add flour mixture to mixer and mix until combined. If dough seems a little too sticky, add 1/2 C additional flour.

  4. Roll out dough to 1/4" thick, cut into desired shapes and bake at 350 degrees for 8-10 minutes.
